Pickle Dip

Who is here for all the snacks? Both of us are die-hards for snacks/dips. Renae very happily showed off her newly stocked snack drawer on a recent FaceTime call, with plenty of sunflower seeds. I am not a fan of sunflower seeds, seems like so much work for this little tiny seed.

I’ll stick with dip and this is definitely one of my favorites. Not much can beat a good dip with crackers or chips. This one we’re about to share is a favorite of our family’s, we have made it countless times and always get so many compliments. When asked about it no one believes that it is only 3 ingredients. 

1 pkg cream cheese, softened

1/2 lb corned beef

2/3 c chopped pickles

2 TBSP pickle juice (more or less to taste)

1/2 tsp garlic powder

Club Crackers

Combine all ingredients until mixed well. The flavor is best if allowed to chill for 3 hours before serving. Serve with crackers. 

Disclaimer: The meat we use for this dip is a game-changer, but not quite the same as what you can buy in the grocery store. We use dried beef that we get processed from our local butcher (or should I say our parents get it processed). Dried beef can also be referred to as corned beef if you’re buying it from the grocery store. We most commonly use it for cold sandwiches, Reuben sandwiches, or sh*t on a shingle (gravy) served over biscuits for breakfast. We have made some modifications to our recipe so that you can buy corned beef from the deli section at the grocery store and make a dip that tastes just like the one we make using our beef. There is dried beef next to the canned meat at the grocery store. This can defiantly be used in the dip but is not as tender as the other option. I like to mix mine with a hand mixer or in my stand mixer because it breaks up the meat into tiny pieces and allows you to get meat into bite-sized pieces. If using the dried beef my suggestion would be to chop it very finely and will mix it in just fine!
