Marshmallow Cereal Treats

Marshmallow treats may easily be one of my favorite desserts, I’m not sure if it’s because they are so easy to make, or that they are done in about 15 minutes. They are such a classic and can be changed up to meet anyone’s taste. I have adjusted the classic measurements in mine to ensure they are extra marshmallowy and no piece of cereal is left dry.

One of my dear friends makes the best Rice Krispie treats I’ve had. Now I know that seems crazy to say for something that is only 3 ingredients, but I stand by what I say. I could easily eat the majority of the pan when she brings it around. I took her tricks and replicated it but added my favorite fruity cereal to make some amazing treats. The key to her’s being so chewy but still keeping the crunch I found out is all in the way you melt the marshmallows.  Melt all but approximately 1 cup of marshmallows, once those are melted completely add in the last cup and stir just slightly. There will still be clumps of unmelted marshmallows in the mixture when it is time to add in the cereal, and this is what you want. When adding in the cereal it will leave these perfectly half-melted marshmallows throughout the whole pan and it’s truly a game-changer. The last tip is to not press the mixture into the pan, allow it to be tall, and have air in the bars, this keeps them soft. This makes a very large batch! Your 9x13 pan will be very full!

Marshmallow Cereal Treats

6 TBSP unsalted butter

2 cups regular Rice Krispies

6 cups Fruity Pebbles

20 oz. marshmallows

Melt butter in a large pot. Add in all but 1 cup of marshmallows. Melt completely. Remove from heat, add in the last two cups of marshmallows, and stir slightly. You do not want them to melt completely, then add in cereal and stir until completely coated in marshmallows. Press lightly into greased 9x13 pan and allow to cool completely.

**After recently making these I realized just how much you could make using an entire box of Fruity Pebbles. I bought a 15oz. box of cereal for reference. A 15 oz. box is roughly 9 cups of cereal, using the entire box you could make 1.5 times our original recipe. You would have one 9x13 pan and one 8x8 pan of bars. OR you could make a gigantic batch and have really tall rice krispies. If this interests you I’ll do the math for you and make it a lot easier!

9 TBSP butter

3 c. regular rice krispies

9 c. Fruity Pebbles (1 15 oz. box)

30 oz. marshmallows (3 bags)

If you choose to make this larger batch all together make sure you melt your butter and marshmallows in a large stock pot. Also, have a deep 9x13 pan available, it’s going to be A LOT of stuff to cram into the pan.

My favorite combination is easy 2/3 parts Fruity pebbles, and 1/3 part Rice Krispies. I like to incorporate some classic Rice Krispies because they tend to hold up to the warm melted marshmallows a little bit better and help keep the crunch. Although this is my personal favorite there is no wrong answer with these delicious treats. Lucky Charms are sure to be a kid favorite too. Don’t be afraid to get adventurous with flavors another fan favorite is Cinnamon Toast Crunch, keep all measurements for butter and marshmallows the same but use 10 total cups of cereal.
