Chocolate Chip Cookie S’More Bars

for so long we’ve wanted a s’mores recipe that lived on our site. so many tries and messes of marshmallow fluff finally led to this bar. Graham crackers on the bottom, with a thick cookie dough like center, and topped with marshmallow fluff make these a hit for summer.

  • CHOCOLATE CHIP COOKIE S’MORE BARS 

    1 c. butter, partially melted

    1 1/2 c. brown sugar 

    1/2 c. sugar

    2 eggs 

    1 tsp vanilla

    1 tsp baking powder 

    1 tsp baking soda 

    1/2 tsp salt

    2 TBSP dry vanilla pudding mix 

    3 c. flour  

    2 c. chocolate (we used a combination of chopped Hershey’s bars and mini semi sweet chocolate chips) 

    1 (7oz.) jar marshmallow fluff 

    2 sleeves of graham crackers (plus a few more to crush on top after baking,optional) 

    Preheat oven to 350°. Spray (or line with parchment and spray) a 9x13 pan. Place a layer of graham crackers in the bottom of the pan. To a mixing bowl add butter and sugars. Mix on medium speed, add in eggs and vanilla until just combined. Next add baking soda, powder, salt, pudding, and flour. Let that mix on medium speed, then add in chocolate. I’m not going to make you measure any fluff out, that’s about the worst mess ever. Scoop approximately 2/3 of the container of fluff into mixing bowl. Either hand mix or with rotating paddle attachment on low speed, mix it just a few passes so you can still see the fluff.  DON’T incorporate fully. Press cookie dough on top of graham crackers in pan. Dollop rest of fluff on top of dough. I swirled mine into the top slightly. Bake at 350° for 32-36 minutes. I took mine out at 35ish, I can’t remember exactly.  🥴 Optional to sprinkle with graham cracker crumbs right after you take out of oven. Cool completely before eating. 

The graham crackers keep their crunch for 2-3 days on the bottom of these bars.

Anna had mentioned on social media that she had measurements to make this in an 8x8 pan if that was more appealing. This recipe halves very well! Simply take everything by half and bake in 350 degree oven for 16-19 minutes.
