No Bake Peanut Butter Cookies

The options are endless with these easy cookies. Add in M&Ms, chocolate chips, or nuts. We also like melting some extra PB and pouring that over the top of the cookies, then drizzling some chocolate on at the very end.

A twist on the classic no bake cookies we all know and love. And also…Eggless. we all know how EXPENSIVE eggs are right now, so here is a great recipe that will allow the kids to dye a few more.

  • NO BAKE PEANUT BUTTER COOKIES

  • 1/2 c. butter

  • 1/2 c. milk ( I have used both whole milk and evaporated milk depending on what I had on hand)

  • 1 c. sugar

  • 3/4 c. brown sugar

  • 1 tsp vanilla

  • pinch of salt

  • 1 c. creamy peanut butter

  • 3 1/4 c. old fashioned oats

  • In a large pot combine butter, milk, and sugars on medium heat. Continue to stir until the mixture just reaches a boil. Do not boil more than 1 minute! Remove from heat and stir in vanilla and 1 cup of peanut butter. Stir until peanut butter is completely combined, then add in all the oatmeal. Combine until oatmeal is coated with pb mixture. It will look runny, but that is ok! I used a 1 1/2 TBSP cookie scoop to scoop cookies onto wax paper. Once cookies are scooped out, heat 1/2 c. of peanut butter in the microwave for approximately 45 secs. Spoon a little peanut butter over each cookie, allowing it to run down the sides. Next melt the chocolate chips in a bowl in the microwave, stirring every 20 seconds. When melted, drizzle over top of cookies. Allow to cool for 2 hours before storing in an airtight container.

  • If mixing in M&Ms or chocolate chips, mix them in at the very very end right before scooping into cookies. Peanut butter mixture is hot and will start to melt them right away.

  • I have tried putting them in the fridge to cool a little quicker. I found that they were a lot more crumbly when I did that, I think they cooled to quick.

  • I prefer to use old fashioned oats in this recipe. I have used quick oats, but about half and half of each. I have not used all quick oats. I think it could be done, but the cookies may be a bit more crumbly. The quick oats will soak up more of the pb mixture.

  • Store in an airtight container.

This is a fun recipe to finally share on our website and pinterest because it is one of the first recipes we developed on our own. the first PICTURES we took of these we loved so much and were so proud of how they turned out. We took them on the floor of our brothers kitchen BECAUSE for whatever reason it was the best lighting that day.
