Ground Beef and Corn Casserole
This can be assembled in just a few minutes with easy pantry items you might already have. Ground beef and corn will be sure to please all the men you are feeding, add some spices and rice and now its an entire meal.
GROUND BEEF AND CORN CASSEROLE
2 TBSP butter
Half of yellow onion, chopped
Minced Garlic (measure with your heart)
3 TBSP flour
1 1/2 tsp. chili powder
Salt and Pepper to taste
1 c. Minute White Rice
1 lb. cooked ground beef
1 can fire roasted tomatoes (we diced ours up smaller)
1 can whole kernel corn
1 can creamed corn
1 1/2 c. shredded colby jack cheese
Preheat oven to 350 degrees. In a large pot, melt butter, add in onions and garlic. Once very fragrant whisk in flour. To pot add rice, tomatoes, corn and 3/4 c. water. The water amount may vary depending how much liquid is in the corn and tomatoes. Start with less and if more is needed to allow rice to finish cooking add a little at at time. Simmer for 10ish minutes until rice is almost cooked through. Add more water here if needed. Mix in cooked ground beef and 1 cup shredded cheese. Pour into a greased casserole dish. Top with remaining cheese. Bake at 350 for 20-25 minutes until rice is cooked and is heated through.
We know a lot of people get beef in 2 lb. packages. Or if you grew up in a family like ours, mom always opted to use more beef in recipes as requested by the guys in the family. If you do want to use more beef, we suggest decreasing the amount of rice. This recipe filled the casserole dish fairly full, more may not fit into your dish.

This recipe came from a dear neighbor we grew up around. She is a fantastic cook! so fantastic that once we saw someone put her brown gravy over a piece of chocolate cake. Both of which were her recipes. not sure exactly what that means, but if someone wants to combine any of our recipes like that we’ll take it as a compliment.
