Goody Bars

Shortbread crust, marshmallow center, and a crunchy top is the perfect combination. this is somewhat of a dupe for a salted nut roll, just added a buttery crust to make into a bar.

  • GOODY BARS

  • 1 box yellow cake mix

  • 1 egg

  • 1/2 c. butter

  • 3-4 c. mini marshmallows

  • 20 oz. butterscotch chips (roughly a bag and a half)

  • 1 1/2 c. rice krispies

  • 1 1/2 c. salted peanuts

  • Preheat oven to 350 degrees. Combine cake mix, egg, and melted butter. Press into 9x13 pan. Bake for 13 minutes. Remove from oven and spread marshmallows on top, return to oven and bake for 2 minutes, just until puffy. Melt butterscotch chips (melt slowly to prevent seizing up), combine with rice krispies and peanuts. Spread over then entire cake. Cool completely before serving. 

we’ve always had these bars around christmas when grandma had them on her cookie tray. to us they just go hand in hand with the holidays, but shouldn’t be saved for just a certain time of year.
