Pumpkin Gooey Butter Cake
it’s not going to take long to realize that we are fans of cake mix recipes around here. cake mixes are so VERSATILE and can be made into so many different things. Keep a few on hand for those times you need something in a hurry. We have more cake mix recipes to share and others on our site we will link below!
Gooey Butter Cake isn’t a new recipe by any means. Anna has had it before, and seen it many times across social media and Pinterest. Our mom has a recipe for classic gooey butter cake, but also on the same recipe card she has multiple variations and flavors! We will be sharing all of the variations in the cookbook.
PUMPKIN GOOEY BUTTER CAKE
Crust:
1 box yellow cake mix
1 egg
½ c. butter melted
Filling:
1 (8 oz.) package cream cheese, softened
3 eggs
15 oz. pumpkin pie filling (If using just plain pumpkin puree be sure to add cinnamon and pumpkin pie spice)
1 tsp vanilla
1 (16 oz.) package powdered sugar
½ c. butter melted
Combine cake mix, egg, and ½ cup butter. Press into a greased 9x13 pan. Beat cream cheese until smooth; add eggs one at a time, pumpkin, and vanilla. Beat until all smooth and combined. Mix in powdered sugar. Slowly pour the butter in, mix well. Pour over the cake mix layer. Bake at 350° 40 to 50 minutes. Center should be gooey, cool completely before serving.
Serve with Cool Whip
DO NOT be like Anna. She dumped all the filling ingredients into her stand mixer at once….it does not come together smoothly. It didn’t really look appetizing, but tried baking anyways. The filling should be like pumpkin pie, hers was not.
