Poppy Seed Chicken

This recipe was given to us from our grandma Bernie. She turned 89 yesterday, and still lives on the farm our mom grew up on. We are so lucky to have her and value so much the things she has taught us. she told us this recipe is a staple for her to make. It’s simple with ingredients you may already have on hand.

  • POPPY SEED CHICKEN

  • 2 lbs. chicken breast or thigh

1 (8 oz) container of sour cream

1 can cream of chicken soup

    1/2 c. butter

    2 TBSP poppy seeds

1 sleeve Ritz Crackers OR 1 1/2 c. french fried onions

  • Preheat oven to 350 degrees. Cut chicken into bite size pieces. Season with salt and pepper to taste. We also added some garlic powder and paprika. Spread chicken in bottom of greased 9x13 baking dish. Mix together sour cream and soup. Pour over chicken. Crush crackers if using Ritz. Cover top with either crackers or onions. Melt butter and drizzle over top. The butter is good when using crackers, allows them to get crispier. Not necessary to use butter if topping with onions. Sprinkle with poppy seeds. Bake at 350 degrees for 45-55 minutes, until chicken is cooked through.
