Ham and White Cheddar Tortellini

It’s like a fancy version of mac and cheese. And the vegetables make it healthy…right?! This could easily become a recipe that is added to the normal rotation of weeknight meals. Change the protein and vegetable and you have a whole new meal.

  • HAM AND CHEESE TORTELLINI

  • 3 TBSP Butter

  • 2 cloves garlic

  • 1/4 c. Onion, diced

  • 2 TBSP Flour

  • 1 can Chicken Broth

  • 1/3 c. Heavy Cream -or- Milk

  • 8 oz. White Cheddar cheese, shredded

  • 1 pkg. cheese tortellini

  • 16 oz. cubed ham

  • 1 c. Peas ( I used frozen & microwaved until cooked)

  • Salt and Pepper to taste

  • In a large skillet, melt butter. In separate pot cook tortellini and drain. Cook garlic and onions a few minutes in melted butter. Whisk in flour followed by chicken broth. Whisk until smooth, add in heavy cream and shredded cheese. Cook until cheese has melted and sauce is thick. Stir in tortellini, ham and peas.  If sauce is too thick can add milk or some pasta water to thin out.

  • **Tortellini comes in various sizes from 14 oz-20 oz. The bag used here was 19 oz.

This recipe also reheats well. Anna made this for lunches during the week and got roughly 5 meals for herself out of this recipe.
