Fresh Cucumber Salsa

this is such an amazing summer veggie appetizer. this is the recipe you can throw together in a rush. with very little prep time, this recipe allows you just toss everything together and be done.

  • 4 c. cucumber,chopped

  • 1/3 c. red onion, chopped

  • 1 can rotel, drained

  • 1 pkg. dry ranch dip mix

  • Combine all ingredients in large bowl. Cover and let chill for a couple of hours before serving. We do recommend draining the rotel because the cucumbers will produce liquid after sitting in the fridge. Serve with tortilla chips.


this dip is best eaten within 2 days (it won’t last that long anyways) or it becomes more water than dip from the cucumbers. For extra flavor use a spicy ranch mix.
