Crockpot Lasagna

exactly as the name suggests. layer everything up in the crockpot set it and forget it (for a couple hours at least). This can be prepped ahead of time and set in the fridge overnight to set the next day up for dinner success.

  • CROCKPOT LASAGNA

  • 1 lb. Ground Beef

  • 1 Jar Spaghetti Sauce

  • 6 Lasagna Noodles (see notes below about using no boil noodles)

  • 1 1/2 c. Cottage Cheese

  • 1 1/2 c. Mozzarella Cheese, shredded

  • Spoonful of Sour Cream

  • Parmesan Cheese

  • Brown ground beef and drain. Combine cottage cheese, 1/2 cup shredded mozzarella, and one spoonful of sour cream. Put one spoonful of sauce in bottom of the crockpot. Mix remaining sauce with beef. Place two uncooked noodles on sauce. Spread 1/3 meat mixture on top. Spread half of cheese mixture over meat. Repeat layer. For third and  final layer two more uncooked noodles, final third of meat sauce, and the rest of the shredded cheese. Sprinkle of Parmesan cheese on top. Cook on low for 4 hours. 

    ** When I made this, I used no boil noodles because that’s what I had on hand. I could hardly taste them and could have added more. If using regular noodles stick to recipe. 

    **This could easily be doubled using two pounds of meat and two jars of sauce. If doing so and adding more layers of noodles be sure to allow more cooking time. 

i called grandma bernie once asking for a recipe of hers that i wanted but somehow didn’t gather while i was at her house. she mailed me what i was asking for, along with about 12 more recipes. she called to make sure i got them and said numerous times that i needed to try this crockpot lasagna. so i did just that. -anna
