Fresh Strawberry Pie
This recipe has been in the back of my mind knowing it would be a perfect summer recipe to share. I’ve just never taken the time to make and share it. When my grandma called last week with a pie crust recipe i needed to test out for her. i knew that if it turned out this is what i would fill the pie crust with.
FRESH STRAWBERRY PIE
1 c. + 2 TBSP sugar
1 c. water
Pinch of salt
3 TBSP cornstarch
3 TBSP water
3 oz. strawberry Jell-O
1 pint strawberries, sliced
Combine sugar, 1 cup water, and pinch of salt in a pan and boil until sugar is dissolved. Stir the 3 tablespoons of water into 3 tablespoons of cornstarch and add to the above mixture. Cook until clear, stirring constantly, will become very thick. Add Jell-O and stir until Jell-O is dissolved. Cool. Add in the sliced strawberries before Jell-O sets up completely. Pour into a baked pie dish shell. Chill until jello is set. Best served with whipped cream.
Keep covered in refrigerator.
This could be made with either a classic pie crust, or graham cracker crust.

The second I make a recipe I start thinking about ways I could change it up and make different flavors. This would be so fun and easy to make with other fruit. I’m already craving a raspberry version! The perfect summer recipe with all the amazing fruit that is in season.
SIMPLE PIE CRUST
1 c. Crisco
Pinch of Salt
2 c. Flour
1/2 c. Cold Water
This is enough to make two crusts. Use it to either make two pies, or a top and bottom of crust.
Preheat oven to 400° Combine all ingredients in stand mixer. Mix until combined into soft dough. If dough is sticky add a tablespoon of flour at a time until soft dough forms. Roll out dough thin. Bake in a greased pie crust for 10-12 minutes at 400°.
