Pickle Rollup Dip
Everyone’s beloved pickle and ham ROLL UPS but in dip form…With beef. Pickles wrapped in cream cheese and ham are so good and an amazing appetizer. But if you don’t have time for that tedious act of dealing with trying to spread cream cheese give this pickle wrap dip a try.
PICKLE DIP
1 (8 oz.) pkg. Cream Cheese
1/3 c. Diced Pickles
5 oz. Dried Beef **see notes below about beef we use
1/2 tsp Garlic Powder
Pickle Juice to taste
Dice pickles. Chop beef into small pieces. Combine all ingredients. We like using either our stand mixer or hand mixer to ensure the cream cheese is all incorporated. Pickle juice also helps thin the dip slightly so use as much as you would like. We start small, taste test, and add more juice as necessary. Chill before serving.
**Now this is where making this dip can get tricky. Our mom regularly gets dried beef made at the butcher when we take beef in to get done. She always has some in the freezer. It’s sliced super thin and a favorite for our dad. We use it as lunch meat, for reuben melts, or in white gravy in place of sausage.
It has more flavor and in our opinion, and is way better than anything you buy from the store. We have tested and tested this recipe to achieve the same flavor using store bought dried beef. We have found the trick to be garlic powder. If you have dried beef available to you from the locker skip the garlic powder completely! We only use garlic powder if using store bought dried beef, either from the cold section or off the shelf.
