Fiesta Burger with chipotle Mayo

A spicy twist on a classic burger. TOp it off with chipotle mayo and pico de gallo for delicious meal.

  • Fiesta Burger

Burger Seasoning (for 1lb. of ground beef)

    3/4 tsp. Cumin

    1 1/2 tsp. Chipotle seasoning

    3/4 tsp. Garlic Powder

Combine all spices with 1 lb. of ground beef. Or sprinkle each patty with some of each seasoning. Patty into approximately 1/3 lb. patties. Grill on medium heat until desired doneness.

  • Spicy Mayo

    1/4 cup real Mayo

2 tsp of the sauce from a can of chipotle peppers in adobo sauce —or— 1/2 tsp chipotle chili powder (this has a tendency to be spicy so feel free to start with 1/4 tsp)

    1 tsp of chipotle seasoning

Combine all ingredients. Cover in airtight container and allow to chill before serving.

  • Fresh Salsa

    2 c. tomatoes diced

    1.5 c. onion diced

    1.5 c. bell pepper diced

    1 c. canned corn drained

    1 medium jalapeño finely diced

    1 lime juices

    1/2 tsp. garlic salt

    2 tbsp. fresh cilantro minced

Dice tomatoes, peppers, onions, and jalapeños. Combine with corn, minced cilantro, garlic salt, and the juice from the lime. Stir well. Let chill for a couple hours before serving.

This is one of the first recipes that Renae and Anna have developed together. We each have had ideas and been able to come up with something on our own, but we sat down one day in the summer and fused two favorite things together. This is a spin on a classic cheeseburger. With a few added spices and flavors this burger is easily a favorite recipe of ours. Top it off with pepperjack cheese, fresh pico de gallo, and chipotle mayo and you have one of the most flavorful cheeseburgers you will ever have.

Let us know what you would add to make this your own.
