Beefed Up Scalloped Potatoes
our sister in law makes awesome scalloped potatoes. One night while eating at her house it got me thinking that it really wouldn’t be that hard to incorporate a touch more flavor, more sauce, and beef to create an entire meal in one casserole dish.
BEEFED UP SCALLOPED POTATOES
1 lb. ground beef, cooked and drained
1/2 c. onion, chopped
2 tsp chopped garlic
hamburger or steak seasoning of choice
1/3 c. butter
2 heaping TBSP flour
1 3/4 c. milk
6 oz. shredded cheddar cheese
1/2 tsp. smoked paprika
2 tsp dill
1 1/2 lb. red potatoes, (sliced thinly, approx. 1/4 in thick)
Heat oven to 350 degrees. Cook ground beef, onion, and garlic, drain off grease. Season beef with choice of seasoning, I use a generic hamburger seasoning. In saucepan melt butter, then add flour to make a roux. Slowly pour in milk while continuing to whisk until fully combined with roux and sauce thickens. Add shredded cheese, salt, pepper, paprika, and dill.
In a greased casserole dish spread a small amount of sauce on the bottom, then follow with a layer of beef and then sliced potatoes. Continue to layer cheese sauce, beef, and potatoes. Be sure to end with a layer of cheese on top and that it fully covers the potatoes.
Bake uncovered for 50-60 minutes, or until potatoes are cooked through.
